Poker has become such a popular game that everyone is looking to cash in, and not just by playing the game. You can make money for yourself or your organization via poker without handling the cards - you just have to help other people do so.
These days poker is a fine vehicle for charity events. People like to give money to charity, sure, but they also like to get a little something for the money they give. A sense of satisfaction and knowing they are doing something nice is good but add to that a lot of fun and the chance to win something big for themselves, and people will be lining up to donate. If you are part of an organization that needs some cash, consider dealing cards and sending out invitations.
Of course you will need to check the local laws to make sure this is a legal endeavor. Once you check that out, you can start planning. Do you want to play an actual poker tournament? If so, you will need space, tables, chairs, cards, chips and people to deal and monitor the tourney. Perhaps you want to have a poker theme, but not actually play the game? Consider a poker run.
Lay out a course that people have to travel - by car, boat, plane, running, walking, swimming - you decide what would make the most sense. Have regular stops along the way for players to pick up cards and pay out prizes based on the best poker hands.
These are the basics; you will want to plan for food and prizes and how to get the word out. Make sure to run the numbers and do a preliminary budget, so that you make sure that the donations you collect will cover the costs.
